In-person written exams and classwork are really the only solution for this, either handwritten or on dumb devices locked down to only being a word processor.
Perhaps read the text? Literally the first paragraph:

I always check my students google doc timestamps. 1:50 pm zero words and then 1:51 250 words is always the tell they used ai.

This only catches the most naive cheaters.
